Asian Fusion Coleslaw

Asian Fusion Coleslaw

Enjoy as a side dish with some fish or as a light healthy snack!

1 16 ounce bag shredded cabbage
1 cup sugar snap peas, chopped
1/4 cup fresh basil, chopped
2 cloves garlic, minced
1 red bell pepper, diced
1 orange bell pepper, diced
1 can water chestnuts, drained
2 green onions, sliced
Sea salt and Cracked Pepper to taste

Dressing:
2 Tablespoons Olive Branch White Sesame Ginger Balsamic Vinegar
1 1/2 Tablespoons Olive Branch Roasted Sesame Seed Oil
1 1/2 Tablespoons Olive Branch Chipotle EVOO

In a large salad bowl combine shredded cabbage, sugar snapped peas, basil, garlic, red bell pepper, orange bell pepper, water chestnuts, green onion, Balsamic Vinegar, Sesame Seed Oil and Chipotle EVOO. 

Toss ingredients together and season to taste with sea salt and fresh cracked pepper.  Refrigerate before serving.

Optional:
For a little extra protein try adding a little leftover shredded chicken or pork.  This would also work well with fish such as tuna, shrimp, or salmon.
