Charred Chipotle Pineapple Salsa

Grilling brings out the sweetness of the pineapple which is combined with the smoky heat of Olive Branch Chipotle Extra Virgin Olive Oil, savory red onion, cilantro and lime. This is the perfect salsa to top grilled fish tacos, pork tenderloin or grilled chicken breasts.  

Makes 2-3 cups

1 Fresh pineapple, peeled, cored and sliced
2 Tbsp. Olive Branch Chipotle Extra Virgin Olive Oil
1/2 cup chopped fresh cilantro
1/4 cup finely chopped red onion
1 Serrano chili, stemmed, seeded and finely chopped
Zest and juice of 1 lime
Olive Branch Sea Salt

1. Prepare a grill for high heat cooking.

2. Toss the pineapple slices with The Olive Branch Chipotle Extra Virgin Olive Oil and a pinch of sea salt, coating all sides.  

3. Grill the pineapple over high heat until nicely charred, but not too soft, about 1-2 minutes per side.  Set aside to cool.

4. Dice the pineapple slices into small dice. Toss with the remaining ingredients in a large bowl.  Taste and adjust seasoning as needed.  Serve immediately or cover and refrigerate until ready to serve.
